Nitrogen gas has unique benefits in food packaging: it does not react chemically with food or get absorbed by it. It reduces the oxygen and water content within the packaging, significantly inhibiting the growth and reproduction of bacteria, mold, and other microorganisms. This slows down the oxidation, spoilage, and decay of food, thus preserving freshness. Nitrogen packaging also effectively prevents food from being crushed, sticking together, or clumping, maintaining the food's shape, dryness, crispness, color, and flavor. Currently, nitrogen packaging is rapidly replacing traditional vacuum packaging and is used in the food industry for meat products, fruit and vegetable chips, fried potato chips and fries, and oil-cooked foods, among others.
