Methods for preventing rice from getting moldy in summer
Rice is a finished grain product that has lost its protective layer after processing, so it has poor storage stability.
Its characteristics:
1. Easy to absorb moisture.
2. Prone to cracking, i.e., cracks appear on the rice grains. Controlled atmosphere storage includes methods such as natural deoxygenation, carbon dioxide filling, and nitrogen filling with a nitrogen generator. Generally, grain piles are sealed with plastic film or other airtight materials to change the gas composition within the grain pile, placing it in a low-oxygen, nitrogen-rich, high-carbon dioxide state to achieve the purpose of mildew prevention, pest control, and safe summer storage.
Natural deoxygenation storage of rice has low costs and requires no mechanical equipment, but it affects the quality of rice, especially rice with higher moisture content, which can reduce its viscosity and increase the fatty acid value. If carbon dioxide is added to the deoxygenated grain pile, the preservation and mildew prevention effect is very good. According to experiments, small packages of rice filled with carbon dioxide can be safely stored for 2 years at 0~35℃.
Compared with carbon dioxide storage, using a nitrogen generator for nitrogen filling storage can reduce costs and improve storage effect. A more practical method is to use a molecular sieve nitrogen generator for negative pressure and cyclic replacement. Nitrogen is filled into the sealed grain pile for 4 hours.
